Corn Meal Mush with Vegetable Cooked In

Well,  one could call it “Savory Corn Meal Mush.”  It’s very simple, the idea being that it’s pretty much the same as Savory Oats except you use corn meal instead of oat meal.

Here’s how I made it this morning:

I sauteed onion and pepper... then added some canned tomatoes. I added a cup of cold water... and half a cup of corn meal. Stir it all up, and when it started to boil.. I broke a couple of eggs onto the top. I turned the heat down to LOW and covered it. When the eggs were fully poached I added some seaonings. And thus my breakfast was prepared.

I didn’t really find anything exactly like it in other people’s recipes on the Internet.  This Polenta Primavera is pretty close, but the vegetables are poured on top of the mush rather than being cooked in.  Similarly, this Creamy, Cheesy Polenta with Creamy Cheesy Vegetable Ragu also cooks the cornmeal mush and the vegetables separately, and then puts them together. I just made it a little simpler by cooking it all in one pan.

Just goes to show ya’, you can do whatever you want.  Heck, as I recall, I think I cooked a can of sardines in my cornmeal mush one day last week.  After all, everyone ought to know that corn meal is one of the essential life-sustaining supplies!
